Stop Cumulus and edit cumulus.ini (station section) within the main Cumulus folder. Change the "StartDate=" line. Be sure to use the same format for the date.

This start date (that Cumulus first started tracking all-time records) is on the default Cumulus recordsT.htm template twice once with the label "Records began on" followed by <#recordsbegandate>. Here are the extremes recorded since then. and once with the label "Records since" followed by <#recordsbegandate>, note it does not need to be updated for Cumulus to recognise earlier data in log files in its data subfolder and obviously there is an alternative of editing description to say "Cumulus began on" and leaving cumulus.ini unchanged.
